Bryan Rubey

Head Chef


I was born in Anaheim, California.  I ended up moving and settling with my family on the Gulf Coast in Mobile, Alabama.

I required work while  attending school at the University of South Alabama and happened to take a job as a prep cook at a newly opened Northern Italian restaurant called Trattoria at Broad.  I learned the Italian ways from Chef Gary Ferguson and progressed through the ranks of the kitchen to sauté cook.  As my life progressed , I took other jobs , in other fields, but nothing brought me as much joy and satisfaction as cooking.

So, I set out to find another job in the culinary industry.  I thought my luck had run out and I was ready to move back to California when I received a call from Chatman Ellis, the Chef/Owner of another great Italian restaurant in the Mobile area called Via Emilia.  He offered me a job as Sous Chef, which I thankfully took and my culinary career was on track. 

It was at Via Emilia that I learned important tools of the trade such as work ethic, using fresh foods, and consistency. I learned how to work with fresh pastas, make bread, and became skilled at pastries and desserts. I learned many things over the eight years that I worked there.

I did leave Via Emilia for a year in the middle of my tenor there to work with French cuisine under Chef Matt Shipp at his restaurant called Justines.  I was able to refine my skills and gained a fresh, new perspective on food at Justine’s. I also began to think of food multi culturally and the ideas of fusion began to form.  I returned to Via Emilia as the Executive Chef where I was happy to use fresh ingredients,  design menus, and train the staff.

Feeling the need for a change of pace, I moved to Salt Lake City and took a job as Saucier at Rivers Restaurant where I worked under Chef Dan Shootman who has French and Asian influences.  I eventually moved up to Chef de Cuisine of Private Reserve, which was the private club located inside of Rivers.  We were serving American Contemporary cuisine in an upscale environment.  We used only the highest quality ingredients and methods.

From Rivers, I took the job of Sous Chef for Chef Frank Mendoza at the Aerie Restaurant at Snowbird Ski and Summer Resort.  A great experience, Chef Mendoza had opened several restaurants in the California and Chicago areas. He worked as Sous Chef for top rated French Chef in America, Roland Passot at La Folie in San Francisco.

These are the experiences I bring to the table as Chef at Heritage Gardens.

Saturdays, Sundays, and Holidays
 are generally not available

A $250.00 non-refundable deposit is required
 to reserve the date and time. For 50 or more guests
there is no room charge, (Monday – Friday).
 A $250.00 room charge applies for under 50 guests.

The dining room is available for 2 ½ hours from the time
of arrival.  The building must be vacated by 3:00 p.m.

Dressing rooms are available for $30.00 each.
Fresh floral centerpieces may be rented for
$6.00 per table.
Candles must be approved in advance by
Heritage Gardens

Menu selection is required 4 weeks prior and a
minimum guaranteed count  is required 7 days prior. 
We will be prepared to serve 10% above your final count
at the per person price.  Select one menu for the
 entire  group. Vegetarian and specialty menus are
available, there may be an additional charge.
